Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

Salt and black pepper, to taste

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper.

Sear the Chicken: In a large skillet or frying pan, heat the olive oil over medium-high heat. Once hot, add the chicken thighs, skin-side down. Sear for about 7-8 minutes until the skin is crispy and golden brown. Flip the thighs and sear the other side for an additional 5-7 minutes. Once browned, remove the chicken from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the minced garlic, dried thyme, and dried oregano. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to burn it.

Add the Broth: Pour in the chicken broth and let it simmer for about 3 minutes, scraping the bottom of the pan to release any brown bits.

Creamy Addition: Lower the heat and stir in the heavy cream and Parmesan cheese, mixing well until smooth. Allow this mixture to simmer for an additional 3-4 minutes until it thickens slightly.

Combine and Cook: Return the chicken thighs to the skillet, skin-side up, ensuring they are well coated in the creamy garlic sauce. Cover the skillet and let it cook on low heat for about 15-20 minutes until the chicken is cooked through (internal temperature should reach 165°F/75°C) and tender.

Garnish and Serve: Once cooked, remove from heat. Garnish with freshly chopped parsley, and serve hot with your choice of side dishes like mashed potatoes, rice, or a crisp salad.
