Creamy Corn & Pesto Pasta

8 oz (225g) pasta (fusilli, penne, or spaghetti)

1 cup sweet corn kernels (fresh or frozen)

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese (plus extra for serving)

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

1 tablespoon lemon juice (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package directions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.

    Prepare the Corn: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds or until fragrant. Stir in the sweet corn and cook for an additional 3-4 minutes until the corn is tender and slightly caramelized.

      Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Mix in the pesto and grated Parmesan cheese. Stir well to combine, letting the sauce simmer for about 2-3 minutes until it thickens slightly. If you prefer a creamier consistency, add reserved pasta water a little at a time until desired consistency is reached.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat thoroughly in the creamy corn and pesto sauce. Season with salt, pepper, and a splash of lemon juice if desired.
