1 pound (450g) boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces (225g) mushrooms, sliced (cremini or button)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon all-purpose flour

1 cup (240ml) chicken broth

1 tablespoon Worcestershire sauce

1 cup (240ml) sour cream

2 tablespoons fresh parsley, chopped (for garnish)

8 ounces (225g) egg noodles or pasta of choice

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Cook the egg noodles or pasta according to the package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, reduce the heat to medium and add the chopped onion. Sauté until the onion is soft and translucent, about 4-5 minutes. Add the garlic and mushrooms, cooking until the mushrooms are browned and have released their moisture, about 5-6 minutes.

        Add Seasonings: Sprinkle in the dried thyme, paprika, and a bit more salt and pepper. Stir in the flour and cook for 1-2 minutes, allowing it to combine and soak up the juices from the vegetables.

          Make the Sauce: Gradually pour in the chicken broth and Worcestershire sauce, stirring continuously until the mixture thickens slightly, about 3-4 minutes. Lower the heat and return the cooked chicken to the skillet.

            Add Sour Cream: Stir in the sour cream until fully incorporated and the sauce is creamy and smooth. If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.

              Combine with Pasta: Add the cooked pasta to the skillet and carefully toss until everything is well coated with the creamy sauce. Adjust seasoning if necessary.
