Creamy Chicken Alfredo Lasagna Rolls

9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 ½ cups mozzarella cheese, shredded, divided

½ cup grated Parmesan cheese

2 cups Alfredo sauce (store-bought or homemade)

1 cup spinach, chopped (fresh or frozen)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Lasagna Noodles: Boil a large pot of salted water. Add the lasagna noodles and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a large bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, chopped spinach, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Assemble the Rolls: Spread ½ cup of Alfredo sauce evenly on the bottom of a 9x13 inch baking dish. Take one cooked lasagna noodle and spread a generous portion of the chicken filling on it. Roll the noodle up tightly and place it seam-side down in the baking dish. Repeat with remaining noodles and filling.

          Top with Sauce and Cheese: Once all rolls are in the dish, pour the remaining Alfredo sauce over the rolls, ensuring they are evenly covered. Sprinkle the remaining ½ cup of mozzarella cheese over the top.

            Bake the Lasagna Rolls: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Let it Rest: Once done, remove from the oven and let the dish sit for about 5 minutes. This will help the rolls set.
