1 medium head of cauliflower, cut into florets

2 medium potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup whole milk (or plant-based milk for a vegan option)

1 tablespoon olive oil

1 teaspoon thyme (dried or fresh)

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh chives or parsley, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until it's translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute, making sure not to burn it.

    Cook the Vegetables: Add the cauliflower florets and diced potatoes to the pot. Sprinkle in the thyme and smoked paprika, and season with a pinch of salt and pepper. Stir to combine, cooking for another 5 minutes.

      Add Broth and Simmer: Pour in the vegetable broth, and bring the mixture to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the cauliflower and potatoes are tender.

        Blend the Soup: Once the vegetables are cooked, use an immersion blender to puree the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth.

          Finish with Creaminess: Return the blended soup to low heat (if using a countertop blender). Stir in the whole milk, adjusting the seasoning with more salt and pepper to taste. Let it warm through for about 5 minutes.

            Serve: Ladle the soup into bowls, and garnish with chopped fresh chives or parsley for an added touch of color and flavor.
