4 medium-sized russet potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup green onions, chopped (for garnish)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened, then add the minced garlic and cook for another minute until fragrant.

    Cook the Potatoes: Add the diced potatoes to the pot, followed by the vegetable broth. Stir in the Cajun seasoning and smoked paprika. Bring the mixture to a boil, then reduce the heat to a simmer.

      Simmer: Allow the soup to simmer for about 20-25 minutes, or until the potatoes are tender when pierced with a fork. Stir occasionally to ensure nothing sticks to the bottom of the pot.

        Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. If you prefer some chunks for texture, blend half of the soup and leave the other half as is. Alternatively, you can transfer the soup in batches to a regular blender, but exercise caution with the hot liquid.

          Stir in the Cream: Once blended, stir in the heavy cream and season with salt and pepper to taste. Allow it to heat through for an additional 5 minutes.

            Garnish and Serve: Ladle the soup into bowls and garnish with chopped green onions and fresh parsley. Serve warm, accompanied by crusty bread for dipping.
