Creamy Cajun Chicken Pasta Bake

2 cups penne pasta

1 lb chicken breast, diced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (red or yellow for sweetness)

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup chopped green onions (for garnish)

Optional: 1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the diced onion, garlic, and bell pepper. Sauté for 3-4 minutes until softened.

          Prepare the Creamy Sauce: Add the heavy cream and chicken broth to the skillet with the vegetables. Stir in the Cajun seasoning and smoked paprika. Allow the mixture to simmer for 5 minutes, thickening slightly.

            Combine Ingredients: Return the cooked chicken to the skillet and add the cooked pasta. Stir everything together until well combined.

              Add Cheese: Fold in the shredded mozzarella and half of the Parmesan cheese until melted and creamy. Taste and adjust seasoning with more salt and pepper, if needed.

                Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13-inch baking dish. Sprinkle the remaining Parmesan cheese over the top.

                  Bake: Place the baking dish in the preheated oven and bake uncovered for 20-25 minutes, until bubbly and golden on top.
