2 cups macaroni pasta

2 cups butternut squash (peeled and diced)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 cup vegetable broth

1 cup milk (whole or dairy-free)

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

½ cup cream cheese (for extra creaminess)

½ teaspoon nutmeg (optional)

Fresh parsley or chives for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente. Drain and set aside.

      Roast the Butternut Squash: In a baking dish, toss the diced butternut squash with olive oil, garlic powder, onion powder, dried thyme, salt, and pepper. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
