8 ounces (about 225g) penne or fusilli pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, diced

4 cups broccoli florets (about 1 large head)

3 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 cup grated Parmesan cheese (optional for a vegan version, can substitute nutritional yeast)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for a kick)

Fresh basil or parsley for garnish

Lemon zest for serving

Sauté Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.

    Cook Broccoli: Add the broccoli florets to the pot and stir for a couple of minutes. Then pour in the vegetable broth and bring it to a simmer.

      Cook Pasta: Once boiling, add the pasta to the pot. Stir well, ensuring the pasta is submerged in the broth. Cover and cook for about 10-12 minutes (or until pasta is al dente), stirring occasionally to prevent sticking.

        Create Creamy Sauce: Once the pasta is cooked, reduce the heat to low. Stir in the heavy cream (or coconut cream), Parmesan cheese (if using), salt, black pepper, and red pepper flakes. Mix well until creamy and heated through. If the sauce is too thick, add a splash of additional vegetable broth or water.

          Finish and Serve: Remove the pot from heat. Taste the dish and adjust seasoning if necessary. Serve warm, garnished with fresh basil or parsley and a sprinkle of lemon zest for brightness.
