Creamy Beef Noodle Casserole

1 pound ground beef

8 ounces egg noodles

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup beef broth

1 cup shredded cheddar cheese (divided)

1 cup frozen mixed vegetables (peas, corn, and carrots)

2 tablespoons Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 teaspoon paprika (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to the package instructions until al dente. Drain and set aside.

      Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart as it cooks. Once browned, drain any excess fat.

        Sauté Aromatics: To the skillet with the ground beef, add the chopped onion and minced garlic. Cook for about 3–4 minutes, or until the onion is translucent.

          Combine Ingredients: Lower the heat and stir in the cream of mushroom soup, sour cream, beef broth, Worcestershire sauce, Italian seasoning, salt, pepper, and paprika (if using). Mix until well combined and simmer for about 5 minutes.

            Mix in Noodles and Veggies: Add the drained egg noodles and frozen mixed vegetables to the beef mixture. Stir until everything is evenly coated with the creamy sauce.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

                Add Cheese Topping: Sprinkle half of the shredded cheddar cheese over the top of the mixture. Reserve the other half for later.

                  Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                    Add Remaining Cheese: After 25 minutes, remove the foil and sprinkle the remaining cheddar cheese on top. Bake uncovered for an additional 10–15 minutes, or until the cheese is melted and bubbly.

                      Garnish and Serve: Remove the casserole from the oven and let it sit for about 5 minutes before serving. Garnish with chopped fresh parsley for a pop of color.
