Ingredients

1 lb elbow macaroni

4 cups sharp cheddar cheese, shredded

2 cups mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

4 cups whole milk

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce:

        - In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 2 minutes to create a roux, stirring constantly to avoid browning.

          - Gradually add the whole milk while whisking continuously. Continue to cook until the mixture thickens, about 5-7 minutes.

            - Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.

              - Remove from heat and gradually add in the shredded cheddar and mozzarella cheese, stirring until smooth and creamy.

Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, mixing until the pasta is well-coated.

Prepare for Baking: Pour the mac and cheese mixture into a greased 9x13 inch baking dish. If using, combine the breadcrumbs with olive oil in a small bowl and sprinkle evenly over the top.

Bake: Place the dish in the oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
