CREAMY BAKED MAC AND CHEESE

8 oz elbow macaroni

3 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 cups whole milk

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon mustard powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional)

Salt and pepper to taste

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, about 6-8 minutes. Drain and set aside.

      Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 2 minutes until it’s lightly golden.

        Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the mixture thickens and bubbles, about 5-7 minutes.

          Season the Sauce: Add garlic powder, onion powder, mustard powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Stir well to combine.

            Incorporate Cheese: Lower the heat and add the sharp cheddar and Gruyère cheese, stirring until melted and smooth. Taste and adjust seasoning if necessary.

              Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring until the pasta is completely coated with the creamy mixture.

                Prepare for Baking: Transfer the mac and cheese to a greased 9x13-inch baking dish. Spread it out evenly.

                  Breadcrumb Topping: In a small bowl, mix the breadcrumbs with grated Parmesan cheese. Sprinkle the mixture evenly over the mac and cheese.
