12 oz. spaghetti or pasta of choice

2 ripe avocados, halved and pitted

2 cloves garlic, minced

2 tablespoons fresh lemon juice

3 tablespoons olive oil

1/4 cup fresh basil leaves, plus extra for garnish

Salt and black pepper, to taste

1/2 cup cherry tomatoes, halved (optional)

1/4 cup grated Parmesan cheese (optional)

Red pepper flakes, for a kick (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Avocado Sauce: In a food processor, combine the flesh of the avocados, garlic, lemon juice, olive oil, basil, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, gradually add some of the reserved pasta water until the desired consistency is reached.

      Combine Pasta and Sauce: In a large mixing bowl, combine the drained pasta with the creamy avocado sauce. Toss well to ensure every strand is evenly coated.

        Add Extras: If desired, add cherry tomatoes, red pepper flakes, and Parmesan cheese to the pasta. Toss gently to combine.
