2 slices of sourdough bread

1 ripe avocado

4 oz fresh mozzarella cheese, sliced

1 medium tomato, sliced (preferably heirloom for extra flavor)

1 tbsp olive oil

1 tbsp butter, softened

Salt and pepper, to taste

Fresh basil leaves (optional, for garnish)

Balsamic glaze (optional, for drizzle)

Instructions
 

Prepare the Avocado: In a small bowl, scoop out the avocado and mash it with a fork. Add a pinch of salt and pepper to taste. Set aside.

    Assemble the Sandwich: Take one slice of sourdough bread and spread a layer of the mashed avocado on it. On top of the avocado, layer the slices of fresh mozzarella and tomato. If desired, sprinkle with additional salt and pepper. Add a few fresh basil leaves for extra flavor if you choose.

      Top It Off: Place the second slice of sourdough bread on top of the tomatoes, creating a sandwich.

        Prepare for Grilling: Heat a non-stick skillet over medium heat. Spread the softened butter on the outer sides of the sandwich. Drizzle the olive oil into the skillet.

          Grill the Sandwich: Once the skillet is hot, place the sandwich in the pan. Cook for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and grill the other side for an additional 3-4 minutes, pressing gently down with a spatula to ensure even grilling.

            Check for Melting: After both sides are golden and crispy, check if the mozzarella has melted. If it hasn't, you can lower the heat and cover the skillet for a minute to help the cheese melt evenly.

              Serve: Once done, remove the sandwich from the skillet and let it cool slightly. Optionally, drizzle with balsamic glaze before slicing in half.
