2 cups cooked white rice

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

1 cup crushed buttery crackers (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent (about 2-3 minutes). Add the chicken pieces, season with salt, pepper, garlic powder, onion powder, and paprika. Cook until the chicken is no longer pink, approximately 5-7 minutes. Remove from heat.

      Mix the Casserole Base: In a large bowl, combine the cooked rice, cream of chicken soup, sour cream, shredded cheddar cheese, and frozen mixed vegetables. Stir in the cooked chicken mixture and combine thoroughly.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly across the dish.

          Prepare the Topping: In a small bowl, combine the crushed buttery crackers with a little melted butter (optional) for extra crunch, and sprinkle evenly over the casserole.

            Bake the Casserole: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
