Crazy Good Casserole

Ingredients
  

1 lb ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup uncooked elbow macaroni

2 cups beef or chicken broth

1 cup shredded cheddar cheese

1 cup sour cream

1 small red onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.

      Sauté Veggies: Add the diced onion and minced garlic to the skillet with the meat, cooking until the onion is translucent (about 3-4 minutes).

        Combine Ingredients: In a large mixing bowl, combine the cooked meat mixture with black beans, corn, diced tomatoes, uncooked macaroni, and all the spices (chili powder, cumin, paprika, salt, and pepper). Pour in the broth and mix until well combined.

          Assemble the Casserole: Grease a 9x13 inch baking dish. Pour the mixture into the casserole dish evenly.

            Add Cheese and Sour Cream: Stir in half of the shredded cheddar cheese and all of the sour cream. Top with the remaining cheddar cheese for a delicious cheesy crust.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the macaroni is tender and the cheese is melted and bubbly.

                Garnish and Serve: Let the casserole sit for about 5 minutes before serving. Garnish with fresh cilantro, if desired, and enjoy your Crazy Good Casserole!
