Cranberry Orange Glazed Pork Chops – A Flavor Explosion!

4 bone-in pork chops (about 1-inch thick)

Salt and pepper to taste

2 tablespoons olive oil

1 cup fresh cranberries (or frozen, thawed)

Zest of 1 orange

1/2 cup fresh orange juice

1/4 cup honey

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Optional: Orange slices for garnish

Prepare the Marinade: In a mixing bowl, combine the fresh cranberries, orange zest, orange juice, honey, Dijon mustard, and thyme. Stir gently to mix, and then set aside to let the flavors meld.

    Season the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.

      Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, or until they develop a golden-brown crust. Remove from the skillet and set aside.

        Make the Glaze: In the same skillet, add the cranberry-orange mixture. Bring to a simmer over medium heat, scraping up any browned bits from the bottom of the skillet. Cook for about 3-4 minutes, allowing the cranberries to burst and the sauce to thicken slightly.

          Combine and Roast: Return the pork chops to the skillet, spooning some of the glaze over the top. Reduce the heat to low, cover, and cook for another 5-7 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).

            Finish and Serve: Once cooked, remove the chops from the heat and let them rest for a few minutes. Serve warm, topped with the cranberry orange glaze. Garnish with orange slices if desired.
