Cranberry Orange Glazed Chicken

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh cranberries (or frozen, thawed)

1 cup orange juice (freshly squeezed is best)

Zest of 1 orange

1/3 cup honey or maple syrup

1 tablespoon Dijon mustard

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

1 clove garlic, minced

1 tablespoon balsamic vinegar

Optional: Chopped fresh parsley for garnish

Instructions
 

Prepare the Chicken:

    - Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.

      Sear the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C).

          - Once cooked, remove the chicken from the skillet and set it aside on a plate to keep warm.

            Make the Cranberry Orange Glaze:

              - In the same skillet, add the fresh cranberries and cook for about 2 minutes, or until they start to pop.

                - Stir in the orange juice, orange zest, honey or maple syrup, Dijon mustard, thyme, minced garlic, and balsamic vinegar. Bring the mixture to a simmer.

                  - Reduce the heat to medium-low and let the glaze simmer for about 5-10 minutes, stirring occasionally, until it thickens slightly.

                    Combine Chicken and Glaze:

                      - Return the chicken breasts to the skillet and spoon the cranberry orange glaze over the top, ensuring each piece is well coated. Cook for an additional 2-3 minutes to heat through.

                        Serve:

                          - Place the glazed chicken on a serving platter and drizzle any remaining sauce from the skillet over the top. Garnish with chopped fresh parsley, if desired. Serve warm.
