1 (16 oz) package of cranberry-flavored gelatin (like Jell-O)

1 cup boiling water

1 cup cold water

1 (14 oz) can whole cranberry sauce

1 cup pineapple chunks (canned, drained or fresh)

1/2 cup chopped walnuts or pecans (optional)

1 cup mini marshmallows

1/2 cup whipped cream or cool whip (for topping)

Fresh mint leaves (for garnish, optional)

Instructions
 

Dissolve Gelatin: In a medium mixing bowl, combine the cranberry-flavored gelatin and boiling water. Stir well until the gelatin is completely dissolved.

    Add Cold Water: Add 1 cup of cold water into the dissolved gelatin mixture, stirring to combine.

      Incorporate Cranberries: Gently fold in the can of whole cranberry sauce, ensuring that it’s well mixed with the gelatin.

        Add Fruits: Carefully mix in the pineapple chunks and walnuts (if using). Make sure everything is evenly distributed.

          Include Marshmallows: Stir in the mini marshmallows, folding them gently into the mixture to avoid them breaking apart.

            Chill the Mixture: Pour the cranberry mixture into a decorative mold or a 9x13 inch dish. Place it in the refrigerator and allow it to set for at least 4 hours or until fully firm.

              Serve: Once set, carefully remove from the mold (if using) by dipping it in warm water for a few seconds and inverting onto a serving plate.
