Crab Balls

Ingredients
  

1 pound fresh lump crab meat, picked over for shells

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup mayonnaise

1 large egg, beaten

2 tablespoons Dijon mustard

1 teaspoon Worcestershire sauce

2 green onions, finely chopped

1 tablespoon fresh parsley, chopped

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil for frying (canola or vegetable)

Instructions
 

In a large mixing bowl, gently combine the crab meat and breadcrumbs. Be careful not to break up the crab too much; you want chunks for texture.

    In a separate bowl, mix the mayonnaise, beaten egg, Dijon mustard, Worcestershire sauce, chopped green onions, parsley, garlic powder, paprika, salt, and pepper until well blended.

      Pour the mayonnaise mixture over the crab and breadcrumbs. Using your hands, gently fold the mixture together until it's just combined. Avoid over-mixing.

        Preheat the oil in a deep frying pan or a skillet to 350°F (175°C).

          Form the crab mixture into golf ball-sized balls, roughly 1-2 inches in diameter.

            Once the oil is hot, carefully place the crab balls in the oil, frying them in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 3-4 minutes per side.

              Remove the crab balls from the oil and place them on a plate lined with paper towels to drain excess oil.

                Serve immediately with your favorite tartar sauce, aioli, or a squeeze of lemon for an extra zing!
