2 cups rolled oats

2 ½ cups unsweetened almond milk (or any milk of choice)

3 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

½ cup maple syrup (adjust to taste)

¼ cup brown sugar (packed)

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon vanilla extract

¼ teaspoon salt

½ cup chopped walnuts or pecans (optional)

½ cup raisins or dried cranberries (optional)

1 tablespoon coconut oil or unsalted butter (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with coconut oil or butter.

    Prepare the Oats: In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, brown sugar, ground cinnamon, nutmeg, vanilla extract, and salt. Stir well until all the ingredients are fully incorporated.

      Add Apples & Nuts: Gently fold the diced apples into the oatmeal mixture. If you're using nuts and raisins, add them in as well, mixing until evenly distributed throughout the mixture.

        Pour into Baking Dish: Transfer the oatmeal apple mixture into the greased baking dish, spreading it out evenly with a spatula.

          Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the mixture is set and the top is lightly browned.

            Cool and Serve: Once baked, allow the oatmeal apple bake to cool for about 10 minutes. This allows it to set further. Serve warm, topping with additional maple syrup and a dollop of yogurt or whipped cream if desired.
