Cozy & Hearty Chicken Noodle Soup

Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 pound boneless, skinless chicken thighs (or breast), cut into bite-sized pieces

8 cups low-sodium chicken broth

2 bay leaves

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

3 cups egg noodles

1 cup frozen peas

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

    Add minced garlic and cook for an additional minute until fragrant.

      Stir in the sliced carrots and celery, cooking for another 5 minutes until they begin to soften.

        Add the chicken pieces to the pot and season with salt, pepper, thyme, and rosemary. Cook for about 5-7 minutes until the chicken is browned on all sides.

          Pour in the chicken broth, add bay leaves, and bring to a boil. Reduce heat and let it simmer for about 15 minutes.

            Stir in the egg noodles and cook according to package instructions (usually about 6-8 minutes), until they are al dente.

              In the last 2 minutes of cooking, add the frozen peas and lemon juice to the soup.

                Remove the bay leaves before serving. Adjust the seasoning with more salt, pepper, or lemon juice if needed.

                  Ladle the soup into bowls and garnish with fresh parsley.
