2 boneless, skinless chicken breasts, diced

12 oz penne pasta

½ cup unsalted butter

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 tsp smoked paprika

1 tsp chili powder

½ tsp cayenne pepper (adjust to taste)

Salt and black pepper, to taste

½ cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

Fresh parsley or cilantro, for garnish

Optional: Lime wedges for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the diced chicken breasts with smoked paprika, chili powder, cayenne pepper, salt, and black pepper.

      Cook the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add the remaining butter. Once melted, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until softened and fragrant.

          Add Veggies: Stir in the cherry tomatoes and corn. Cook for an additional 4-5 minutes, until the tomatoes start to burst and release their juices.

            Create the Sauce: Pour in the chicken broth and bring to a simmer. Let it reduce for about 5 minutes, then stir in the heavy cream. Mix well until combined.
