12 oz rigatoni pasta

1 cup cottage cheese (preferably whole milk)

1/2 cup heavy cream

1/2 cup vodka

1 cup crushed tomatoes

1 medium onion, finely chopped

3 cloves garlic, minced

2 tbsp olive oil

1 tsp red pepper flakes (adjust to taste)

1/2 tsp salt (adjust to taste)

Freshly cracked black pepper, to taste

1/2 cup grated Parmesan cheese, plus more for serving

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

      Add the Vodka: Carefully pour the vodka into the skillet (it may flame slightly, so be cautious). Allow it to simmer and reduce for about 2-3 minutes, letting the alcohol cook off.
