Cottage Cheese and Veggie Bake

2 cups cottage cheese

1 medium zucchini, diced

1 medium bell pepper, diced (any color)

1 cup spinach, chopped

1 medium onion, diced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for about 2-3 minutes until fragrant. Next, add the zucchini and bell pepper, cooking for an additional 5 minutes until they soften. Stir in the chopped spinach and cherry tomatoes, cooking until the spinach wilts. Season with salt, pepper, oregano, and basil. Remove from heat and let it cool slightly.

      Mix the Ingredients: In a large mixing bowl, combine the cottage cheese, shredded mozzarella, and grated Parmesan. Beat the eggs separately and then add them to the mixture. Stir until well incorporated.

        Combine and Layer: Once the vegetable mixture has cooled, add it to the cheese and egg mixture. Fold gently until all ingredients are well combined.

          Transfer to Baking Dish: Grease a 9x9 inch (or similar size) baking dish. Pour the cottage cheese and veggie mixture into the dish, spreading it out evenly.

            Bake: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden and set.

              Cool and Serve: Once done, remove from the oven and let it cool for about 10 minutes. Garnish with fresh parsley if desired before slicing and serving.
