Cold Sesame Chicken Noodles

8 oz. soba noodles (or any thin noodles of your choice)

1 cup cooked chicken, shredded (grilled or rotisserie)

1/2 cup cucumber, julienned

1/2 cup shredded carrots

1/4 cup red bell pepper, thinly sliced

1/4 cup scallions, chopped

1/4 cup fresh cilantro leaves, chopped (optional)

1 tablespoon sesame seeds, toasted

For the Sesame Sauce:

3 tablespoons tahini (or sesame paste)

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1-2 tablespoons water (to thin the sauce, if needed)

Salt and pepper to taste

Cook the Noodles: In a large pot of boiling salted water, add the soba noodles and cook according to package instructions (usually around 4-6 minutes for thin noodles). Stir occasionally to prevent sticking. Once cooked, drain and rinse under cold water to cool.

    Make the Sesame Sauce: In a medium bowl, combine tahini, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. Whisk until smooth. If the sauce is too thick, add 1-2 tablespoons of water to achieve your desired consistency. Adjust taste with salt and pepper.

      Combine Ingredients: In a large mixing bowl, combine the chilled noodles, shredded chicken, cucumber, shredded carrots, red bell pepper, scallions, and cilantro (if using).

        Dress the Noodles: Pour the sesame sauce over the noodle mixture. Use tongs or chopsticks to gently toss everything together until the ingredients are evenly coated.

          Chill: For enhanced flavor, cover and refrigerate the noodle salad for at least 15-30 minutes. This allows the flavors to meld together beautifully.

            Serve: Before serving, give the noodles a final toss, then sprinkle the toasted sesame seeds on top. Serve cool or at room temperature.
