1 cup coconut milk

1 cup heavy cream

1/4 cup granulated sugar

2 teaspoons matcha green tea powder

1 teaspoon vanilla extract

2 teaspoons gelatin powder (or agar-agar for a vegan option)

3 tablespoons cold water (for gelatin)

For the Matcha Drizzle:

1 tablespoon matcha powder

2 tablespoons honey or agave syrup

2 tablespoons warm water

Pinch of sea salt

For Garnish:

Fresh mint leaves

Toasted coconut flakes

Prepare Gelatin: In a small bowl, sprinkle the gelatin powder over the cold water and allow it to bloom for about 5-10 minutes. If using agar-agar, follow the package instructions.

    Heat Coconut Mixture: In a medium saucepan, combine the coconut milk, heavy cream, and sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is warm but not boiling.

      Add Matcha and Vanilla: Once the mixture is warm, whisk in the matcha powder until completely dissolved and smooth. Stir in the vanilla extract.

        Incorporate Gelatin: Remove the saucepan from the heat. If using gelatin, add the bloomed gelatin to the warm mixture and stir until completely dissolved. If you are using agar-agar, return the saucepan to low heat and stir continuously until the agar-agar has fully dissolved.

          Set the Panna Cotta: Pour the mixture into individual serving cups or bowls. Let it cool to room temperature, then refrigerate for at least 4 hours or until set.

            Make the Matcha Drizzle: In a small bowl, mix together the matcha powder, honey (or agave syrup), warm water, and a pinch of sea salt until smooth. Adjust sweetness as desired.

              Serve: Once the panna cotta is set, remove from the refrigerator. Drizzle the matcha mixture over the top and garnish with fresh mint leaves and toasted coconut flakes.
