For the crust:

1 ¾ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

1 teaspoon ground cinnamon (optional)

For the filling:

4 (8 oz) packages cream cheese, softened

1 ¼ cups granulated sugar

1 teaspoon vanilla extract

1 teaspoon lemon zest

4 large eggs

1 cup sour cream

¼ cup all-purpose flour

For the topping (optional):

Fresh berries (strawberries, blueberries, raspberries)

Whipped cream

Instructions
 

Prepare the crust:

    Preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and ground cinnamon (if using). Mix until well combined and crumbly. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

      Make the filling:

        In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes. Gradually add the sugar and beat until well combined. Then mix in the vanilla extract and lemon zest.

          Incorporate the eggs:

            Add the eggs one at a time, making sure to mix well after each addition. Scrape down the sides of the bowl as needed to ensure everything is well combined.

              Add sour cream and flour:

                Gently fold in the sour cream and flour until just combined. Be careful not to overmix, as this can create cracks in your cheesecake.

                  Pour and bake:

                    Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about an hour to prevent cracks.

                      Cool and chill:

                        Once cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight for the best flavor and texture.

                          Serve:
