For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 teaspoon vanilla extract

For the Filling:

1 can (14 oz) sweetened condensed milk

½ cup sour cream

¾ cup key lime juice (freshly squeezed if possible)

1 tablespoon lime zest

3 large egg yolks

For the Topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Lime slices or wedges for garnish (optional)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Make the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and vanilla extract. Mix until the crumbs resemble wet sand. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in the preheated oven for about 8–10 minutes, or until golden brown. Remove and let it cool.

      Prepare the Filling: In a large mixing bowl, whisk together the sweetened condensed milk, sour cream, key lime juice, lime zest, and egg yolks until smooth and well combined.

        Bake the Pie: Pour the filling into the cooled crust and spread it evenly. Bake in the oven for about 15 minutes until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours or until fully chilled.

          Make the Topping: In a medium bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until stiff peaks form.

            Assemble the Pie: Once the pie is set and chilled, spread the whipped cream topping over the pie. Use a spatula to smooth it out. Optionally, garnish with lime slices or wedges for an extra touch.
