Classic Eggs Benedict

4 large eggs

2 English muffins, split and toasted

4 slices of smoked salmon

1 tablespoon white vinegar

Fresh chives, chopped (for garnish)

Salt and pepper, to taste

For the Hollandaise Sauce:

3 large egg yolks

1 tablespoon lemon juice

1/2 cup unsalted butter, melted

Salt, to taste

Pinch of cayenne pepper (optional)

Instructions
 

Prepare the Hollandaise Sauce:

    - In a heatproof bowl, whisk the egg yolks and lemon juice together until the mixture becomes thick and pale.

      - Place the bowl over a pot of simmering water (double boiler method) and slowly drizzle in the melted butter while continuously whisking until the sauce thickens.

        - Season with salt and a pinch of cayenne pepper. Keep the sauce warm (not hot).

          Poach the Eggs:

            - Fill a saucepan with water and add the white vinegar. Bring to a gentle simmer.

              - Crack each egg into a small bowl or ramekin. Gently slide the eggs into the simmering water, one at a time.

                - Poach for about 3-4 minutes until the whites are set but the yolks remain runny. Remove the eggs with a slotted spoon and let them drain on a paper towel.

                  Assemble the Eggs Benedict:

                    - Place the toasted English muffin halves on plates.

                      - Layer each half with a slice of smoked salmon, followed by a poached egg.

                        - Generously spoon the warm Hollandaise sauce over the eggs, allowing it to cascade down.

                          - Season with salt, pepper, and sprinkle chopped chives on top for garnish.

                            Serve and Enjoy:
