2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

1 ½ cups unsalted butter, softened

4 cups powdered sugar

½ cup unsweetened cocoa powder

1 teaspoon vanilla extract

¼ cup heavy cream (or as needed for consistency)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. You can also line the bottoms with parchment paper for easier removal.

      Mix Dry Ingredients:

        In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

          Combine Wet Ingredients:

            In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

              Combine and Blend:

                Pour the wet ingredients into the dry mixture and mix on medium speed for about 2 minutes. Gradually stir in the boiling water until the batter is well combined. The batter will be thin, which is normal.

                  Bake the Cakes:

                    Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto cooling racks to cool completely.
