Classic Chicken Noodle Soup

1 tablespoon olive oil

1 medium onion, diced

3 medium carrots, sliced

2 celery stalks, chopped

3 cloves garlic, minced

8 cups chicken broth

1 pound boneless, skinless chicken breasts

1 teaspoon dried thyme

1 teaspoon dried parsley

1 bay leaf

Salt and pepper, to taste

4 cups egg noodles

1 cup fresh spinach (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Add Broth and Chicken: Pour in the chicken broth and bring to a gentle boil. Add the chicken breasts whole to the pot along with the dried thyme, dried parsley, bay leaf, salt, and pepper.

      Cook Chicken: Reduce the heat to low, cover, and let the simmer for about 20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).

        Shred Chicken: Once cooked, remove the chicken breasts from the pot and place them on a cutting board. Allow them to cool for a few minutes before shredding them into bite-sized pieces using two forks. Return the shredded chicken back into the pot.

          Prepare Noodles: Add the egg noodles to the pot and cook according to the package instructions, usually about 6-8 minutes, until al dente. If you’re adding spinach, toss it in during the last minute of cooking.

            Final Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
