Cinnamon Sugar French Toast Muffins

Ingredients
  

4 large eggs

1 cup milk (whole or almond)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

8 slices of bread (day-old white or brioche works best)

1/2 cup granulated sugar

2 tablespoons unsalted butter, melted

Optional: maple syrup for serving

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with liners or lightly grease the wells.

    Prepare the Custard: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, nutmeg, and salt until well combined.

      Prepare the Bread: Cut each slice of bread into 1-inch cubes. If the bread is fresh, allow it to sit out for about 30 minutes to slightly dry out, or you can use day-old bread.

        Combine Bread and Custard: Gently fold the bread cubes into the egg mixture, ensuring they are well-coated. Let the mixture sit for about 10-15 minutes, allowing the bread to soak up the custard.

          Make Cinnamon Sugar: In a small bowl, combine the granulated sugar and 1 tablespoon of ground cinnamon. Mix well.

            Fill Muffin Tins: Using a spoon, fill each muffin cup about 3/4 full with the bread mixture. Drizzle the melted butter over the tops of the muffins, then sprinkle a generous amount of the cinnamon sugar mixture over each muffin.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool & Serve: Once baked, allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack. Serve warm, drizzled with maple syrup if desired.
