Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

For the Cinnamon Sugar Topping:

¼ cup granulated sugar

1 tablespoon ground cinnamon

2 tablespoons unsalted butter, melted

For Optional Glaze (for extra sweetness):

1 cup powdered sugar

2-3 tablespoons milk

½ teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Then add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Start and end with the flour mixture, and mix until just combined.

Fold in Apples: Gently fold the diced apples into the batter until evenly distributed.

Prepare Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and ground cinnamon. Pour the melted butter over the top and stir to combine, ensuring all the sugar is moistened.

Assemble the Cake: Pour the apple batter into the prepared baking pan and spread it evenly. Sprinkle the cinnamon sugar mixture over the top of the cake batter.

Bake the Cake: Bake in the preheated oven for 45-50 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Cool the Cake: Remove from the oven and allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Optional Glaze: If desired, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle over the cooled cake.

Serve & Enjoy: Cut into squares and serve warm or at room temperature. Enjoy the delightful combination of spices and juicy apples!
