For the Churros:

1 cup water

1/2 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs

1/2 teaspoon vanilla extract

Oil for frying

For the Cinnamon Sugar Coating:

1/2 cup granulated sugar

1 teaspoon ground cinnamon

For the Sundae:

4 scoops of your favorite ice cream (vanilla or chocolate recommended)

Whipped cream

Chocolate syrup

Caramel sauce

Chopped nuts (optional)

Maraschino cherries for garnish

Instructions
 

Prepare the Churro Dough:

    - In a medium saucepan, combine water, butter, granulated sugar, and salt. Bring to a boil over medium heat.

      - Once boiling, remove from heat and stir in the flour until a dough forms. Let sit for about 5 minutes to cool slightly.

        Add Eggs & Flavor:

          - After cooling, beat in the eggs, one at a time, until the mixture is smooth and elastic. Stir in vanilla extract.

            Fry the Churros:

              - Heat oil in a deep pan to 350°F (175°C). Transfer the churro dough to a piping bag fitted with a large star tip.

                - Pipe 5-6 inch strips of dough directly into the hot oil, cutting with scissors as needed. Fry until golden brown, about 2-3 minutes per side.

                  - Remove churros from the oil and drain on paper towels.

                    Coat with Cinnamon Sugar:

                      - In a shallow dish, mix together granulated sugar and ground cinnamon. Roll the hot churros in the cinnamon sugar until coated evenly.

                        Assemble the Sundae:

                          - In a large bowl or individual serving glasses, scoop 1-2 scoops of ice cream. (You can mix different flavors!)

                            - Drizzle generously with chocolate syrup and caramel sauce, then add whipped cream on top.

                              - Break the churros in half and stick them vertically into the ice cream.
