1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

1 teaspoon cinnamon

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 tablespoon all-purpose flour

1 tablespoon sour cream

For the Topping:

1/4 cup granulated sugar

1 teaspoon cinnamon

1 cup chocolate ganache or chocolate sauce (optional for drizzling)

Instructions
 

Preheat the Oven:

    Preheat your oven to 325°F (160°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.

      Make the Crust:

        In a medium bowl, mix together the graham cracker crumbs, melted butter, 1/4 cup granulated sugar, and 1 teaspoon of cinnamon until well combined. Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and set aside to cool slightly.

          Prepare the Cheesecake Filling:

            In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in 1 cup of granulated sugar, mixing well. Add the vanilla extract, and mix until combined.

              Incorporate Eggs:

                Add the eggs, one at a time, mixing on low speed until just combined after each addition. Do not overmix. Lastly, add the flour and sour cream, mixing gently until the batter is smooth.

                  Combine Layers:
