For the Crust:

1 and ½ cups chocolate graham cracker crumbs

6 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

1/4 teaspoon salt

For the Filling:

8 oz bittersweet chocolate, chopped

1 cup heavy cream

1/2 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup fresh raspberries (plus extra for garnish)

For the Ganache Topping:

4 oz bittersweet chocolate, chopped

1/2 cup heavy cream

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Crust:

    Preheat the oven to 350°F (175°C). In a medium bowl, combine the chocolate graham cracker crumbs, melted butter, sugar, and salt. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 10 minutes, then set aside to cool.

      Make the Filling:

        In a heatproof bowl, combine the chopped bittersweet chocolate and 1 cup of heavy cream. Set the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Stir until the chocolate is melted and smooth. Remove from heat and let it cool slightly.

          Mix in Sugar and Eggs:

            In another bowl, whisk together the sugar and eggs until light and fluffy. Stir in the vanilla extract. Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly until everything is fully combined.

              Fold in Raspberries:
