Ingredients

1 cup sweetened condensed milk

2 cups powdered sugar

1 teaspoon peppermint extract

1/4 teaspoon green food coloring (optional)

1 1/2 cups semisweet chocolate chips

2 tablespoons coconut oil (or shortening)

Instructions

Prepare the Mint Filling:

    - In a medium mixing bowl, combine the sweetened condensed milk, powdered sugar, peppermint extract, and green food coloring (if using).

      - Mix until well incorporated and a dough-like consistency forms. If the mixture is too sticky, add a bit more powdered sugar, one tablespoon at a time.

        Form the Patties:

          - On a clean, flat surface, flatten the mixture into a rectangle about 1/2 inch thick.

            - Use a round cookie cutter (or a glass) to cut out circles of the mint mixture. Place the patties on a parchment-lined baking sheet.

              - Once all patties are cut, place them in the freezer for about 30 minutes or until firm.

                Melt the Chocolate:

                  - In a microwave-safe bowl, combine the semisweet chocolate chips and coconut oil.

                    - Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

                      Dip the Patties:

                        - Remove the frozen mint patties from the freezer. Using a fork, carefully dip each patty into the melted chocolate, ensuring it is completely covered.

                          - Gently shake off any excess chocolate and place the dipped patties back onto the parchment-lined baking sheet.

                            Set the Chocolate:

                              - Once all patties are dipped, refrigerate them for about 15-20 minutes or until the chocolate is set.

                                Enjoy:

                                  - Once the chocolate is firm, remove the patties from the refrigerator and serve. Store any leftovers in an airtight container in the fridge for up to a week.
