Chinese Chicken and Broccoli

1 pound boneless, skinless chicken breast, sliced thinly

3 cups fresh broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 teaspoon sesame oil

1 tablespoon sugar (optional)

Salt and pepper to taste

Cooked jasmine rice or noodles for serving

Sesame seeds and sliced green onions for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken with soy sauce, cornstarch, and sesame oil. Mix well and let it marinate for at least 20 minutes.

    Prep the Vegetables: While the chicken is marinating, wash and cut the broccoli florets into bite-sized pieces.

      Stir-Fry the Chicken: Heat the vegetable oil in a large skillet or wok over high heat. Once hot, add the marinated chicken in a single layer. Stir-fry until the chicken is golden brown and cooked through, approximately 5-7 minutes. Remove and set aside.

        Sauté Aromatics: In the same pan, add a bit more oil if needed. Add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant but not burnt.

          Cook the Broccoli: Add the broccoli florets to the pan and stir-fry for about 3-4 minutes until they are bright green and crisp-tender.

            Combine and Thicken: Return the chicken to the pan. Mix in the oyster sauce and sugar (if using). In a small bowl, combine the cornstarch with water, and stir it into the chicken and broccoli. Cook for another 2-3 minutes until the sauce thickens and coats the chicken and broccoli well.

              Season and Serve: Taste and adjust seasoning with salt and pepper if necessary. Remove from heat. Serve over cooked jasmine rice or noodles, and garnish with sesame seeds and sliced green onions.
