Instructions

Make the Chimichurri Sauce:

    - In a mixing bowl, combine chopped parsley, cilantro, minced garlic, and red pepper flakes.

      - Whisk in the olive oil, red wine vinegar, and lemon juice until well_combined.

        - Season with salt and pepper to taste. Set aside a few tablespoons of the sauce for drizzling later.

          Prepare the Shrimp:

            - In a large bowl, toss the shrimp with olive oil, salt, pepper, and smoked paprika (if using). Ensure that the shrimp are evenly coated.

              Skewer the Shrimp:

                - Thread the seasoned shrimp onto the skewers, leaving a little space between each shrimp to allow even cooking.

                  Grill the Skewers:

                    - Preheat your grill or grill pan over medium-high heat.

                      - Once hot, grill the skewers for about 2-3 minutes per side, or until the shrimp turn pink and opaque, which should take about 6-8 minutes in total.

                        Serve:

                          - Remove the skewers from the grill and drizzle generously with the reserved chimichurri sauce.

                            - Serve the skewers warm with additional chimichurri sauce on the side for dipping.

                              Garnish:

                                - Optional: Garnish with fresh herbs or lemon wedges for an extra pop of flavor and color.
