8 oz elbow macaroni

1 lb ground beef (or turkey for a lighter option)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with green chilies if desired)

1 cup beef or vegetable broth

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium onion, chopped

2 cloves garlic, minced

2 tbsp chili powder

1 tsp cumin

½ tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro (for garnish)

Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to the package directions. Drain and set aside.

    Prepare the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened (about 3-4 minutes).

      Brown the Meat: Increase the heat slightly and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Spice it Up: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well, and cook for 1-2 minutes to toast the spices.

          Combine Ingredients: Add the black beans, kidney beans, diced tomatoes, and broth to the skillet. Mix everything together, then reduce heat and simmer for about 10 minutes.

            Add Macaroni: Gently fold in the cooked elbow macaroni, stirring to combine every ingredient.
