Chicken Tacos with Strawberry Slaw

For the Chicken:

1 lb boneless, skinless chicken thighs

2 tbsp olive oil

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

Juice of 1 lime

For the Strawberry Slaw:

1 cup fresh strawberries, hulled and sliced

2 cups green cabbage, finely shredded

1/2 cup red cabbage, finely shredded

1/4 cup cilantro, chopped

2 tbsp apple cider vinegar

1 tbsp honey (or agave syrup for a vegan option)

Salt and pepper, to taste

For Assembly:

8 small corn tortillas

Lime wedges, for serving

Additional cilantro, for garnish

Marinate the Chicken: In a bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, lime juice, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).

    Prepare the Strawberry Slaw: In a large mixing bowl, combine sliced strawberries, green cabbage, red cabbage, and cilantro. In a small bowl, whisk together apple cider vinegar, honey, salt, and pepper. Pour the dressing over the slaw and toss to combine. Set aside to let the flavors meld.

      Cook the Chicken: Heat a grill or skillet over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
