Ingredients

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

4 cups chicken broth

1 cup heavy cream

3 tablespoons all-purpose flour

2 tablespoons butter

Salt and pepper, to taste

1 teaspoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Optional: puff pastry or biscuit dough for topping

Instructions

Prepare the Chicken:

    - In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

      Sauté Vegetables:

        - In the same pot, add the butter. Once melted, toss in the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables start to soften.

          Create the Base:

            - Stir in the thyme and rosemary, followed by the flour. Cook for an additional 1-2 minutes to form a roux, stirring constantly.

              Add Broth and Cream:

                - Gradually whisk in the chicken broth to avoid lumps, then add the heavy cream and Worcestershire sauce. Bring the mixture to a gentle simmer, stirring occasionally.

                  Combine Chicken and Vegetables:

                    - Return the cooked chicken to the pot, and add the frozen peas. Let the soup simmer for about 10-15 minutes until thickened to your desired consistency. If it gets too thick, feel free to add a little more broth or cream.

                      Adjust Seasoning:

                        - Taste the soup and adjust seasoning with more salt, pepper, or herbs as needed.

                          Serve:

                            - Ladle the soup into bowls. If desired, top with baked puff pastry or biscuit dough for a delicious twist. Garnish with fresh parsley before serving.
