Chicken, Mushroom, and Spinach Lasagna

9-12 lasagna noodles (depending on the dish size)

2 cups cooked, shredded chicken breast

2 cups mushrooms, sliced (preferably cremini or button)

3 cups fresh spinach, roughly chopped

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1 jar (24 oz) marinara sauce (or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil for garnish (optional)

Instructions
 

Prep the Noodles: Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package directions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.

    Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes. Season with salt, pepper, garlic powder, onion powder, oregano, and basil. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside.

      Mix Cheese Filling: In a mixing bowl, combine ricotta cheese, 1 cup of Parmesan cheese, and a pinch of salt and pepper. Mix until smooth.

        Layer the Lasagna: In a large baking dish (9x13 inches), spread a thin layer of marinara sauce on the bottom. Lay 3-4 lasagna noodles over the sauce. Spread half of the ricotta cheese mixture over the noodles. Layer half of the sautéed mushrooms and spinach on top, followed by 1 cup of shredded chicken. Add another layer of marinara sauce and sprinkle with a third of the mozzarella cheese.

          Repeat the Layers: Add another layer of noodles, followed by the remaining ricotta mixture, the remaining mushrooms and spinach, the remaining chicken, and another layer of marinara sauce. Finish with another layer of noodles, then the last of the marinara sauce and top with the remaining mozzarella and Parmesan cheeses.

            Bake the Lasagna: Cover the baking dish with aluminum foil (to prevent sticking, place the foil shiny side down) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Cool and Serve: Remove the lasagna from the oven and let it rest for 10-15 minutes before slicing. This will help the layers set and make serving easier. Garnish with fresh basil if desired.
