Chicken Fajita Casserole Recipe

1 lb (450g) boneless, skinless chicken breasts, diced

1 large onion, thinly sliced

1 bell pepper (red or green), sliced

1 bell pepper (yellow or orange), sliced

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon oregano

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 jar (16 oz) salsa

2 cups cooked rice (white or brown)

2 cups shredded cheddar cheese

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a skillet over medium heat, cook the diced chicken until lightly browned and cooked through, about 5-7 minutes. Season with salt, pepper, chili powder, cumin, paprika, and oregano. Add the minced garlic, onion, and bell peppers, cooking until the vegetables are tender, about 5 minutes more.

      Mix Ingredients: In a large mixing bowl, combine the cooked chicken and vegetable mixture with the black beans, corn, salsa, and cooked rice. Stir until evenly mixed.

        Assemble the Casserole: Pour the mixture into a greased 9x13-inch baking dish. Spread it evenly and top with shredded cheddar cheese.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbling.
