Ingredients

1 lb boneless, skinless chicken breast, sliced into thin strips

4 cups broccoli florets

1 bell pepper, sliced (any color)

2 cloves garlic, minced

1 tablespoon ginger, freshly grated

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon water (if using cornstarch)

Cooked brown rice or quinoa for serving

Sesame seeds and green onions for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, combine the sliced chicken breast with 2 tablespoons of soy sauce, a pinch of black pepper, and the sesame oil. Let it marinate for about 15-30 minutes for flavor enhancement.

Prepare the Sauce: In a small bowl, mix the remaining tablespoon of soy sauce, oyster sauce, garlic, ginger, and cornstarch (if using) with water until smooth. Set aside.

Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken to the hot skillet. Stir-fry for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.

Stir-Fry the Vegetables: In the same skillet, add the broccoli florets and bell pepper slices. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over everything and cook for an additional 2-3 minutes, stirring constantly, until the sauce thickens and evenly coats the chicken and vegetables.

Portion and Store: Let the stir-fry cool slightly before dividing it into meal prep containers. Serve over a bed of cooked brown rice or quinoa.

Garnish: If desired, sprinkle sesame seeds and sliced green onions over each serving for an extra flavor boost.

Refrigerate: Store the containers in the fridge for up to 5 days. Reheat in the microwave before serving.
