1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups chicken broth

1 pound cooked chicken breast, shredded

12 ounces cheese tortellini (fresh or frozen)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Combine Broth and Chicken: Pour in the chicken broth and add the shredded chicken. Bring the mixture to a simmer.

        Cook Tortellini: Once simmering, add the tortellini and cook according to package instructions until al dente. This typically takes about 3-5 minutes for fresh tortellini and 5-7 minutes for frozen.

          Add Cream and Seasonings: Reduce the heat to low, and gently stir in the heavy cream and grated Parmesan cheese. Mix in the Italian seasoning, then season with salt and pepper to taste. Allow the soup to heat through, but do not bring it back to a boil.
