Ingredients
  

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, diced

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

2 cups heavy cream

8 ounces cheese tortellini (fresh or frozen)

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute, until fragrant.

      Pour in the chicken broth and bring to a simmer. Once simmering, add the heavy cream and stir well to combine.

        Stir in the tortellini and cook according to package instructions, usually around 3-5 minutes for fresh tortellini, or until they are tender.

          Return the cooked chicken to the pot and stir in the Parmesan cheese, Italian seasoning, salt, and pepper. Allow the soup to heat through for a couple of minutes.

            Taste and adjust seasoning if necessary.

              Serve hot, garnished with fresh chopped parsley for a burst of color.
