1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon cinnamon

½ cup granulated sugar (for coating)

For the Cinnamon Sugar Coating:

¼ cup granulated sugar

1 tablespoon cinnamon

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a small bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, using an electric mixer, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract, mixing until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. The dough should be soft and slightly sticky.

            Shape the Cookies: Using a cookie scoop or tablespoon, scoop out dough and roll it into balls about 1 inch in diameter.

              Prepare the Cinnamon Sugar: In a shallow bowl, combine ½ cup granulated sugar with 1 tablespoon of cinnamon until well mixed.

                Coat the Cookies: Roll each dough ball in the cinnamon sugar mixture until fully coated.

                  Bake: Place the coated cookie dough balls on the prepared baking sheet, leaving some space between each. Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft.
