1 tsp vanilla extract

1/2 cup cherry pie filling (plus extra for topping)

For the French Toast:

8 slices of thick bread (Brioche or Texas toast works best)

4 large eggs

1 cup milk

1 tsp cinnamon

1 tsp vanilla extract

2 tbsp butter (for cooking)

For Garnish:

Powdered sugar (for dusting)

Fresh cherries (optional)

Maple syrup (for serving)

Instructions

Make the Cherry Cheesecake Filling:

    - In a mixing bowl, beat the softened cream cheese until smooth.

      - Add the powdered sugar and vanilla extract, mixing until combined.

        - Gently fold in the cherry pie filling until evenly distributed. Set aside.

          Prepare the French Toast Custard:

            - In a large bowl, whisk together the eggs, milk, cinnamon, and vanilla extract until well blended.

              Assemble the Stuffed French Toast:

                - Take two slices of bread, spread a generous amount of the cherry cheesecake filling on one slice, and top it with the other slice to create a sandwich. Repeat for the remaining slices.

                  Cook the French Toast:

                    - Heat a skillet or griddle over medium heat and melt 1 tablespoon of butter.

                      - Dip each stuffed sandwich into the egg mixture, making sure to coat both sides well.

                        - Place the coated sandwich in the heated skillet and cook for 3-4 minutes on each side, or until each side is golden brown. Add more butter as needed for subsequent batches.

                          Serve:

                            - Once cooked, remove from the skillet and let cool slightly. Dust the French toast with powdered sugar.

                              - Top with extra cherry pie filling and serve with a drizzle of maple syrup and fresh cherries, if desired.
